Flying Fish Is Merging Fine Dining Quality with Comfort Cuisine

In recent years, the restaurant has become more focused on quality, comfort and creating a welcoming environment that is community centric. Since its rebranding to the Flying Fish Gastro Pub, the restaurant’s decor has become a bit more relaxed, and the menu includes more casual fare. But, the attention to detail, exceptional service and flavour packed cuisine remain.

Owners, Chef Tim Tibbitts and Sommelier Rebecca Tibbitts, have created a menu that features an ever rotating selection of dishes that includes locally sourced ingredients, as well as a large assortment of international wines - many of which are affordable and are a testament to Rebecca’s keen palate. Menu staples include house made dips, appetizers that range from sushi to seasonal lobster fare, chicken wings, and a wide selection of premium burgers that incorporate fresh seafood, vegetables, chicken and beef. Flying Fish’s menu also features heartier dishes like their 72hr Beef Short Ribs or Seared Mahi Mahi.

Weekly specials often pop-up on the menu that focuses heavily on what is currently fresh and in season, on the island. The Bahamas stone crab and lobster seasons can often yield some of the restaurant’s most creative dishes.

Despite Flying Fish transitioning to a more casual aesthetic, their dessert menu still showcases a bit of the fine dining skill and plating technique used since its inception. It is highly recommended to indulge in a dessert or two at the restaurant, which often features deconstructed variations of sweet classics that merge unexpected textures, flavours and techniques.

Chef Tim also loves to share his passion for music with the Flying Fish crowd. When not toiling in the kitchen or creating new dishes, he is known to put down his chef attire, and pick up a mic and guitar to treat diners to live entertainment.
